Fiji Island Curry Recipe
Ingredients
| 2 c. chopped cooked roast beef 500 mL | ||
| Onion | 1/2 Cup (16 tbs), chopped | |
| Carrot | 1/2 Cup (16 tbs), diced | |
| Apple | 1 Large, peeled | |
| Banana | 1 , diced | |
| Raisins | 1/2 Cup (16 tbs) | |
| Lemon juice | 1 1/2 Tablespoon | |
| 1 Tbsp. liquid honey 15 mL | ||
| 2 c. beef gravy 500 mL | ||
| 1-2 Tbsp. curry powder 15-30 mL | ||
| Cooked rice | ||
Directions
Combine all the ingredients except the rice in a saucepan and simmer very gently for 1 1/2-2 hours.
Serve over rice.
