Figs with Orange Liqueur & Mascarpone Recipe

| 1 tablespoon orange-flavored liqueur or 2 teaspoons thawed frozen orange juice concentrate | ||

Directions
Toast pine nuts in a small frying pan over medium heat until golden (about 4 minutes), stirring often.
Let cool.
Trim stems from figs, if desired; then cut each fig in half lengthwise.
Arrange 4 halves on each of 2 dessert plates.
Drizzle figs with liqueur (or brush lightly with orange juice concentrate).
In center of each plate, mound half the mascarpone, shaping it into a cone with a small spatula.
Sprinkle cheese with pine nuts; garnish each plate with mint sprigs, if desired.
To eat, spread cheese and pine nuts on figs; eat with a fork or pick up with your fingers.
