Fiesta Burritos Recipe

| Taco seasoning mix | 1⁄4 Ounce | |
| Tomato juice | 1 1⁄2 Cup (24 tbs) | |
| Vegetable oil | 1 Tablespoon | |
| Ground beef | 1⁄2 Pound | |
| Canned refried beans | 15 Ounce | |
| Shredded cheddar cheese | 8 Ounce, divided | |
| Shredded lettuce | 1 1⁄2 Cup (24 tbs) | |
| Avocado | 1 Small, peeled, cubed |

Directions
Combine seasoning mix, tomato juice, and oil; mix well, and set aside.
Cook ground beef in a skillet until browned, stirring to crumble; drain.
Stir in beans and 1/2 cup tomato juice mixture.
Bring to a boil; cover, reduce heat, and simmer 5 minutes, stirring occasionally, or until mixture is thoroughly heated.
Remove from heat.
Place about 1/4 cup beef mixture and about 2 1/2 tablespoons cheese on center of each tortilla.
Roll up tortillas, and place seam side down in a lightly greased 13- x 9- x 2-inch baking dish.
Pour remaining tomato juice mixture over top.
Cover and bake at 350° for 15 minutes.
Uncover and sprinkle with remaining cheese; bake an additional 5 minutes or until cheese melts.
Sprinkle lettuce and avocado on top, serve immediately.
