Fiesta Pitas Recipe
Ingredients
| 1 small or 1/2 of a medium avocado, pitted, peeled, and chopped | ||
| 1 small tomato, seeded and chopped | ||
| 2 tablespoons taco sauce | ||
| 1 tablespoon sliced green onion | ||
| Egg | 1 , beaten | |
| 2 tablespoons regular rolled oats | ||
| Green chili peppers | 2 Tablespoon, diced | |
| Chili powder | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Ground beef | 3/4 pound | |
| 2 large pita bread rounds, halved | ||
| Lettuce leaves | 4 | |
Directions
For avocado salsa, in a small bowl stir together avocado, tomato, taco sauce, onion, and 1/8 teaspoon salt.
Cover and chill till ready to use.
In a medium mixing bowl stir together egg and taco sauce.
Stir in oats, chili peppers, chili powder, and salt.
Add ground beef, then mix well.
Shape mixture into four 1/2-inch-thick patties.
Place patties in an 8 x 8 x 2-inch baking dish.
Cover with waxed paper.
Micro-cook on 100% power (HIGH) 4 to 6 minutes or till done, turning patties and rotating the dish a half-turn once.
Line each pita half with a lettuce leaf.
Cut each burger in half.
Place 2 burger halves in each pita half.
Top with some of the avocado salsa.
Garnish with black olives, if desired.
