Fiesta Corn Recipe
Fiesta Corn is a superb tasting recipe wonder what's the secret? This recipe is a good way to use corn. I am sure both of us will be in agreement that this Fiesta Corn is truly scrumptious.
Ingredients
1/4 cup (1/8 lb.) butter, melted
2 cups fresh corn, cut from cob
1/2 cup chopped green pepper
1/2 cup chopped pimientos
1/2 cup stuffed green olives, sliced
1/4 cup chopped parsley
1/4 cup flour
1 teaspoon salt
1 teaspoon pepper
2 cups milk
3 eggs, slightly beaten
1 cup shredded Cheddar cheese
Directions
In a large frying pan, saute in the butter for 2 minutes the corn, green pepper, pimientos, green olives, and parsley; cover and cook for 10 minutes.
Blend in flour, salt, and pepper; gradually add milk and cook, stirring, until thickened.
Gradually stir the hot vegetable mixture into beaten eggs.
Blend in the cheese.
Turn into a buttered 2-quart casserole.
Set casserole in a pan of water and bake, uncovered, in a moderate oven (350°) about 25 minutes.
Makes about 8 servings.
