2 tbsp (30 ml) butter
 
2/3 cup (160 ml) fiddle-head greens
 
24 pearl onions
 
Salt and pepper
 
1 French (dry) shallot, finely sliced
 
1/4 cup (60 ml) brown gravy
 
2 tbsp (30 ml) chopped parsley
 
4 vol-au-vent pastry shells

Directions

–  In a skillet, melt butter and saute fiddlehead greens with pearl onions. Season with salt and pepper, add shallots and stir.
–  Pour brown gravy over vegetables and bring to a boil. Remove from heat and sprinkle with parsley. Fill vol-au-vent pastry shells with mixture and serve.
