Fettuccine With White Truffles Recipe
Ingredients
| Butter | 2 Tablespoon | |
| Shallot | 1 Tablespoon, minced | |
| Whipping cream | 1 Cup (16 tbs) | |
| White truffle - 1 | ||
| Italian Fontina cheese - 2 oz | ||
| Salt | 1 To taste | |
| Pepper | 1 To taste | |
| Fettucine - 1 lb, cooked in lightly salted water | ||
Directions
MAKING
1. In a skillet, melt butter over medium heat and cook shallots until soft; add cream, turn the heat up and allow to the cream to reduce by half
2. With a vegetable peeler, shave off truffle slices to make up to a tablespoonful; on the other hand, boil pasta in saled water
3. When the cream begins to thicken, add cheese and cook till it melts; season to your taste, reduce the heat and allow to simmer till the noodles are done
4. Drain the noodles, add truffle shavings to sauce and toss the noodles in the sauce
SERVING
5. Add to warm serving platter, sprinkle freshly ground pepper and serve at once
