Fettuccine With Chicken And Mixed Peppers Recipe
The fettucini with chicken and mixed peppers is a colorful and fresh pasta recipe. Cooked with a medley of peppers, tomatoes and chicken with garlic, basil and red pepper flakes to flavor it, the fetuccini with chicken and pepper is a peppy pasta recipe.
Ingredients
1 tbsp olive oil 15 mL
1 onion, thinly sliced 1
2 cloves garlic, finely chopped 2
pinch hot red pepper flakes pinch
3/4 lb chicken breast, cut in thin strips 375 g
1 sweet red pepper, cut in thin strips 1
1 sweet green pepper, cut in thin strips 1
1 sweet yellow pepper, cut in thin strips 1
1 28-oz/796 mL tin plum tomatoes, drained and pureed or broken up 1
Salt and pepper to taste
3/4 lb fettuccine 375 g
1/4 cup shredded fresh basil or chopped parsley 50 mL
Directions
Heat oil in large, deep non-stick skillet.
Add onion, garlic and hot pepper flakes and cook on low heat for 5 to 8 minutes, until fragrant and tender.
Add chicken and cook just until lightly browned on all sides.
Add peppers and cook for 5 minutes, just until peppers begin to wilt.
Add tomatoes, salt and pepper.
Bring to boil.
Reduce heat and simmer gently for 5 to 8 minutes.
Meanwhile, bring large pot of water to boil.
Add fettuccine and cook until tender but firm.
Drain well and toss with sauce and basil.
Taste and adjust seasonings if necessary.
