Fettuccine With Spinach Sauce Recipe
Ingredients
500g fettuccine fresh cheese
SPINACH SAUCE
15g butter
1 clove garlic, crushed
1 leek, sliced
1 bunch spinach, chopped
250g reduced fat cream cheese
2 tblspn grated cheese
1/2 cup chicken stock
Directions
Cook pasta in boiling water in a large saucepan.
Drain, set aside and keep warm.
To make sauce, melt butter in a saucepan over a medium heat, add garlic and leek and cook, stirring, for 3 minutes.
Add spinach and cook for 3 minutes longer or until spinach wilts.
Place spinach mixture, cream cheese, grated cheese and stock in a food processor or blender and process until smooth.
Return sauce to a clean saucepan, bring to simmering and simmer, stirring constantly, for 5-6 minutes or until sauce thickens and is heated through.
Spoon sauce over hot pasta and toss to combine.
