Fettuccine With Smoked Salmon And Fresh Dill Recipe

Ingredients

 
1/2 lb. Fettuccine
 
1 tbsp. butter
 
1 tbsp. chopped shallots (or white bulb of green onion)
 
2 tbsp. chopped dill (1 1/2 tsp. dry)
 
4 oz. smoked salmon (finely sliced€”julienned)
 
1/3 cup dry vermouth
 
3/4 cup heavy cream
 
Pepper to taste (preferably white)
 
Dill sprigs for garnish salmon caviar for garnish

Directions

Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Heat in large pan.
Cook onions until soft.
Add and cook on a high heat for 1 minute.
Add and cook on high for approx 2 minutes or until cream thickens slightly.
Add noodles and toss mixture in pan until well-mixed.
Garnish with dill sprigs and 1 tsp salmon caviar if desired.
