Fettuccine With Seafood Recipe

Ingredients

 
1/2 lb. fettuccine
 
1/2 large onion, thinly sliced
 
1 leek (white part), thinly sliced
 
1/3 cup chicken stock
 
1/4 cup white wine
 
Salt and red pepper to taste
 
1/2 cup low-fat milk, hot
 
1/2 tsp. lemon juice
 
8 oz. any combination of cooked seafood (shrimp, crab, scallops, or lobster)
 
1/3 cup Parmesan cheese

Directions

Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Meanwhile, prepare sauce.
Cook, covered, in large saucepan until onion and leeks are tender.
Add and simmer, uncovered, for approx 15-20 minutes, stirring frequently.
Remove from heat.
Add to above and mix well.
Add pasta, toss, and serve.
