Fettuccine With Roasted Red Pepper Sauce Recipe
Fettucini in roasted pepper sauce is a herbed and delicously tempting vegetarian pasta recipe. Made with a roasted red pepper sauce flavored with cream, italian dressing and basil for flavor, it is tossed with cooked fettucine to serve with a garnish or topping of cheese.
Ingredients
3 large red peppers
1/2 cup whipping or heavy cream
1/4 cup Italian Dressing
2 tablespoons chopped fresh basil leaves
Salt and pepper to taste
1 package (12 ounces) fettuccine or medium egg noodles, cooked and drained
Grated Parmesan cheese
Directions
In large aluminum-foil-lined baking pan or on broiler rack, place peppers.
Broil, turning occasionally, 20 minutes or until peppers turn almost completely black.
Immediately place in paper bag; close bag and let cool about 30 minutes.
Under cold running water, peel off skin, then remove stems and seeds.
In food processor or blender, process prepared peppers, cream, Italian dressing, basil, salt and pepper until blended.
Toss with hot fettuccine and serve with cheese.
