Fettuccine With Prosciutto And Green Peas Recipe

Ingredients

 
3/4 lb. fettuccine
 
1 cup green peas (fresh or frozen)
 
1/2 cup chicken broth
 
3 tbsp. butter
 
1 small onion, chopped
 
1/4 lb. chopped prosciutto or ham
 
2 large eggs
 
1/3 cup Parmesan cheese
 
Parmesan cheese

Directions

Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Meanwhile, prepare sauce.
Simmer in saucepan until tender.
Set aside.
Melt in saucepan.
Add and saute until golden brown.
Add to above along with peas and broth.
Cook for 1 minute.
Set aside.
Beat in large bowl.
Add the pasta and above ham mixture.
Stir until well-mixed.
