Fettuccine with Bacon and Avocado Recipe
Ingredients
| Fettuccine | 375 Gram | |
| BACON AND AVOCADO SAUCE | ||
| 2 rashers bacon, trimmed and chopped | ||
| Red onion | 1 , sliced | |
| 2 avocados, peeled, stones removed and pureed | ||
| Cream | 2 Tablespoon | |
| Lemon juice | 2 Tablespoon | |
| black pepper | 1 | |
| Parmesan cheese | 3 Tablespoon, grated | |
Directions
1. Cook fettuccine in boiling water in a large saucepan . Drain and set aside to keep warm.
2. To make sauce, place bacon and onion in a frying pan and cook over a medium heat for 3-4 minutes or until onion is soft. Add pureed avocados, cream and lemon juice, and cook, stirring, over a low heat for 3-4 minutes or until heated through. Do not allow sauce to boil.
3. Add fettuccine to sauce and toss .Serve sprinkled with black pepper and Parmesan cheese. Serve immediately.
