Fettuccine Giordino With Chicken Recipe

Ingredients

 
1 pound whole wheat fettuccine
 
1 cup peas
 
1 cup cauliflower, cut into florets
 
1 cup corn
 
1 cup broccoli, cut into florets
 
1 cup diced green and red peppers
 
1 cup green beans or sugar snap peas
 
2 whole chicken breasts, skinned, boned, and cut into small pieces
 
1/4 cup Chicken Stock
 
3 medium-size tomatoes, chopped
 
1/2 cup chopped fresh parsley
 
1/2 cup chopped fresh basil
 
2 teaspoons tamari or soy sauce
 
1/2 teaspoon black pepper
 
1 teaspoon oregano
 
2-3 cups sliced mushrooms

Directions

Cook the fettuccine until al dente.
Meanwhile, steam the peas, cauliflower, corn, broccoli, peppers, and beans until tender, about 10 minutes.
Do not overcook.
In a large skillet, saute the chicken in 2 tablespoons of the stock, until cooked through, about 5 minutes.
Add tomatoes, parsley, and basil.
Remove from heat when tomatoes are warm and wilted.
Add tamari, pepper, and oregano.
In another medium-size skillet, saute the mushrooms with the rest of the stock.
Combine the steamed vegetables, chicken mixture, and mushrooms in a large bowl.
Drain the fettuccine and place on a large serving platter.
