Fettuccine Carbonara Recipe

Ingredients
4 ounces (115 g) pancetta (Italian bacon) or lean American bacon, cut into 12-inch-(1.5 cm) wide strips
3 cloves garlic, cut into halves
1/4 cup (60 ml) dry white wine
1/3 cup (80 ml) whipping cream
1/2 pound (225 g) uncooked fettuccine or spaghetti
Boiling salted water
1 large egg
1 large egg yolk
2/3 cup (160 ml) freshly grated Parmesan cheese (about 2 ounces or 60 g)
Large pinch ground white pepper
Directions
Cook and stir pancetta and garlic in 10-inch (25 cm) non-corrosive skillet over medium-low heat until pancetta is light brown, about 4 minutes.
Discard garlic and all but 2 tablespoons (30 mL) of the drippings.
Add wine to skillet; cook over medium heat until wine is almost completely evaporated, about 3 minutes.
Stir in cream; cook and stir 2 minutes.
Remove from heat.
Cook fettuccine in large saucepan of boiling salted water just until al dente, 6 to 8 minutes; drain well.
Return to dry saucepan.
Whisk egg and egg yolk in small bowl; whisk in 1/3 cup (80 mL) of the cheese and the pepper.
Pour bacon-cream mixture over fettuccine in saucepan; toss to coat.
Heat over medium-low heat just until hot.
Stir in egg-cheese mixture.
Toss to coat evenly.
Immediately remove from heat.
