Fettuccine Carbonara Recipe
Ingredients
500g fettuccine
CARBONARA SAUCE
250g ham, chopped
1/2 cup chicken stock
1 cup cream
7 eggs, lightly beaten
2 tblspn chopped flat leaf parsley
Freshly ground black pepper
Directions
Cook pasta in boiling water in a large saucepan.
Drain, set aside and keep warm.
To make sauce, cook ham, in a frying pan over a medium heat for 3 minutes or until crisp.
Stir in stock and cream, bring to simmering and simmer until sauce is reduced by half.
Remove pan from heat, whisk in eggs, parsley and black pepper to taste.
Return pan to heat and cook, stirring, for 1 minute.
Remove pan from heat, add hot pasta sauce and toss to combine.
