Feta Spinach Squares Recipe
Ingredients
| Butter/Margarine | 2 Tablespoon | |
| Garlic | 1 Clove (5gm), minced | |
| 4 cups packed fresh spinach leaves, chopped | ||
| Unbleached flour | 1/2 Cup (16 tbs) | |
| Baking powder | 1/2 Teaspoon | |
| 2 eggs or 1/2 cup fat-free egg substitute | ||
| Skim milk | 1/2 Cup (16 tbs) | |
| Feta cheese | 1/2 Cup (16 tbs), crumbled | |
| Minced dill | 1 Tablespoon | |
| Dill sprigs (garnish) | ||
| Cherry tomatoes, halved (garnish) | ||
Directions
Place the margarine or butter in an 8" X 8" baking dish and microwave on high for 2 minutes.
Add the garlic and stir to combine.
Stir in the spinach, cover with a lid, and microwave on high for 3 to 4 minutes, or until the spinach is wilted.
In a medium bowl, combine the flour and baking powder.
Stir in the eggs, milk, feta, and minced dill.
Stir in the cooked spinach, then return the mixture to the baking dish.
Microwave on high for 3 minutes.
Rotate the dish a half turn.
Microwave on high for 4 minutes, or until a knife inserted in the center comes out clean.
Cut into squares and serve garnished with the dill sprigs and tomatoes.
