 Green bell pepper1 To taste, cut into thin strips
 Yellow bell pepper1 To taste, cut into thin strips
 Red bell pepper1 To taste, cut into thin strips
 3 tablespoons olive or vegetable oil
 Water1 Tablespoon
 2 teaspoons balsamic or red wine vinegar
 Dried oregano1 Tablespoon, chopped
 Black pepper salt1 To taste
 Walnuts3/4 Cup (16 tbs), chopped
 Olives1/4 Cup (16 tbs)
 Feta cheese1/4 Cup (16 tbs), crumbled
 Radicchio or spinach leaves for garnish

Directions

Arrange bell peppers in microwavable serving dish.
In small bowl, combine oil, water, vinegar, oregano, salt and black pepper; pour over bell peppers.
Sprinkle with walnuts.
Microwave at HIGH (100% power) 5 minutes or until peppers are cooked.
Top with olives and cheese.
