Festive Pepper Medley A La Grecque Recipe
The festive pepper medley a la grecque is a microwaved preparation of mixed bell peppers. Herbed and flavored with a dash of vinegar, the festive pepper medley has a bit of a crunch to it with walnuts in it. Topped with olives and cheese, it is served as a peppy and refreshingly different side to your meals.
Ingredients
| Green bell pepper | 1 To taste, cut into thin strips | |
| Yellow bell pepper | 1 To taste, cut into thin strips | |
| Red bell pepper | 1 To taste, cut into thin strips | |
| 3 tablespoons olive or vegetable oil | ||
| Water | 1 Tablespoon | |
| 2 teaspoons balsamic or red wine vinegar | ||
| Dried oregano | 1 Tablespoon, chopped | |
| Black pepper salt | 1 To taste | |
| Walnuts | 3/4 Cup (16 tbs), chopped | |
| Olives | 1/4 Cup (16 tbs) | |
| Feta cheese | 1/4 Cup (16 tbs), crumbled | |
| Radicchio or spinach leaves for garnish | ||
Directions
Arrange bell peppers in microwavable serving dish.
In small bowl, combine oil, water, vinegar, oregano, salt and black pepper; pour over bell peppers.
Sprinkle with walnuts.
Microwave at HIGH (100% power) 5 minutes or until peppers are cooked.
Top with olives and cheese.
