Fermented Black Bean Dressing Recipe
Ingredients
1 tablespoon fermented black beans
2 tablespoons sherry vinegar or cider vinegar
2 tablespoons water
1 piece (about 2 inches) fresh ginger, peeled, or 1/4 teaspoon ground ginger
1 tablespoon finely chopped green onion
3/4 teaspoon honey
1 tablespoon plus 1 teaspoon peanut or corn oil
Directions
1 In a small bowl, combine the beans, vinegar, and water.
Let stand at room temperature for 30 minutes.
Meanwhile, grate the fresh ginger, then press the gratings through a fine sieve to extract the juice.
Discard the pulp.
Stir the ginger juice, green onion, and honey into the bean mixture.
Gradually whisk in the oil.
Will keep, refrigerated, for up to 3 days.
