Fennel With Tomatoes Recipe
Ingredients
| Oil | 2 Tablespoon | |
| Streaky bacon | 2 Ounce, cut into strips | |
| 3 1/2 oz finely sliced onions | ||
| Fennel | 1 Pound | |
| 2 large tomatoes, skinned and coarsely chopped | ||
| Lemon juice | 3 Tablespoon | |
| Parmesan cheese | 1/2 Cup (16 tbs), grated | |
| Salt | To Taste | |
| Pepper | 1 | |
| Parsley | 1 Tablespoon, chopped | |
Directions
Pour the oil into a dish large enough to cook the fennel in.
Add the bacon and onions.
Cover and microwave on HIGH for 3 minutes.
Remove the stalks and tough base of the fennel.
Slice finely, rinse and drain.
Add the fennel and tomatoes to the onions and pour the lemon juice over.
Cover and microwave on HIGH for 10 minutes.
Add the grated parmesan and season with salt and pepper.
Stir well.
Cover and microwave on HIGH for 1 further minute.
Leave to stand for 2 minutes, then sprinkle with chopped
