Ingredients
2 cups thinly sliced fennel
1/2 cup diced red bell pepper
4 black olives, pitted and chopped
2 tablespoons thinly sliced scallion (green onion)
1 tablespoon plus 1 1/2 teaspoons white wine vinegar
2 teaspoons olive oil
1/2 garlic clove, minced
1/8 teaspoon each salt and pepper
Directions
In medium bowl combine fennel, red pepper, olives, and scallion.
In jar with tight-fitting cover or small bowl combine remaining ingredients; cover and shake well or stir to mix thoroughly.
Pour dressing over fennel mixture and toss to coat; cover with plastic wrap and refrigerate for at least 4 hours.
