Ingredients

 1 bunch curly endive, leaves separated and washed
 Fennel bulb1 Small, cut into thin strips
 3 oranges, peeled and segmented
 Onion1 , sliced
 Black olives20
 Orange dressing
 Olive oil3 1/2 Tablespoon
 White wine vinegar3 Tablespoon
 Fennel1 Tablespoon, chopped
 Orange rind1/2 Teaspoon, grated
 Sugar1/2 Teaspoon
  black pepper1

Directions

1. Place endive on a large serving platter. Arrange fennel, oranges, onion and olives attractively over endive.
2. To make dressing, place oil, vinegar, fennel leaves, orange rind, sugar and black pepper to taste in a screw-top jar. Shake well to combine. Pour dressing over salad and serve immediately.
