Feather Rolls Recipe
Ingredients
5 cups all-purpose flour
1 package active dry yeast
1 1/2 cups warm water (105° to 115°)
1/2 cup mashed, cooked potatoes
1/3 cup margarine or butter, melted
1/4 cup sugar
1 teaspoon salt
Directions
1 In a large mixing bowl combine 2 cups of the flour and the yeast. In a small mixing bowl combine warm water, potatoes, margarine or butter, sugar, and salt. Add to dry mixture in mixing bowl. Beat with an electric mixer on low speed for 30 seconds, scraping side of bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in remaining flour. Cover; refrigerate for 2 to 24 hours.
2 Punch dough down. Turn out on a lightly floured surface. Cover; let rest 10 minutes. Meanwhile, grease a 13x9x2-inch baking pan. With lightly floured hands, shape dough into 24 rolls. Place rolls in prepared pan. Cover; let rise in a warm place until nearly double in size (about 40 minutes). Bake in a 400° oven for 16 to 20 minutes or until golden brown.
