Favorite Wheat Germ Muffins Recipe

These nutritious wheat germ muffins are made with toasted wheat germ and flour and baked with yogurt and brown sugar. The orange juice a flavor of its own that you an enhane by more additions of your choice.

Ingredients

 
1 cup all-purpose flour 250 mL
 
1 cup toasted wheat germ 250 mL
 
4 tsp baking powder 20 mL
 
1/4 tsp baking soda lmL
 
1/2 tsp salt 2mL
 
1 egg
 
2 tbsp softened butter or margarine 25 mL
 
1/4 cup packed brown sugar 50 mL
 
Grated zest of 1 orange
 
1/4 cup orange juice 50 mL
 
Plain yogurt 175 mL

Directions

In a large bowl, combine flour, wheat germ, baking powder, baking soda and salt.
Make a well in the center.
In another bowl, cream together egg, butter and sugar.
Stir in zest and orange juice, mixing well.
Add yogurt.
Add to dry ingredients, stirring just until blended.
Do not overmix.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for about 15 minutes.
