Favorite Roast Beef Recipe
Ingredients
2 tbsp oil
1 4 lb rump roast
1 medium size onion, coarsely chopped
1 small garlic clove, chopped
1/4 cup boiling water
Salt and pepper
3 tbsp butter
3 tbsp flour
Directions
Preheat oven to 350 °F (175 °C).
In an ovenproof casserole dish, heat oil.
Sear roast all over 10 minutes or so.
Add onion and garlic.
Pour in boiling water.
Season generously with salt and pepper.
Cover.
Cook in oven 2 hours or until roast is tender.
Remove roast from dish.
Let stand 5 minutes before carving.
Meanwhile, degrease cooking juices.
Set aside.
In a casserole dish, melt butter.
Sprinkle with flour.
Cook until golden brown.
While stirring, add 2 cups (500 mL) degreased cooking juices.
Add water if juices are insufficient.
Simmer until sauce thickens.
Pour into a sauceboat.
