Favorite Meat Loaf Recipe
Ingredients
l 3/4 pounds ground beef
3/4 cup uncooked oats
1/4 cup finely minced onion
1/4 cup chopped celery
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 cup tomato juice
2 eggs
1/2 cup ketchup
Directions
1. In a large mixing bowl, combine ground beef, oats, onion, celery, salt, pepper, tomato juice, and eggs, blending evenly.
2. Turn mixture into a 9-inch glass pie plate with a glass, open end up, in center of dish, packing lightly.
3. Cook 6 to 8 minutes, rotating dish one-quarter turn halfway through cooking time.
4. Remove excess drippings. Pour ketchup over top, cover with waxed paper, and cook 6 to 8 minutes, rotating dish one-quarter turn halfway through cooking time.
5. Rest, covered, 10 minutes
