Favorite Fruit Clafouti Recipe
Ingredients
| 4 slightly beaten egg whites | ||
| 2 slightly beaten eggs | ||
| Granulated Sugar | 1/3 Cup (16 tbs) | |
| Honey | 3 Tablespoon | |
| 2 Tbsp. fruit liqueur, such as orange or raspberry, or 1/2 tsp. rum extract plus 2 Tbsp. orange juice | ||
| Vanilla | 1 Teaspoon | |
| Salt | 1 Dash | |
| 1 1/2 cups plain nonfat yogurt | ||
| All purpose flour | 1 Cup (16 tbs) | |
| 3 cups raspberries, blueberries, and/or sliced strawberries | ||
| Powdered sugar | 2 Teaspoon, sifted | |
Directions
1. In a large bowl beat together the egg whites, whole eggs, granulated sugar, honey, liqueur or rum extract and orange juice, vanilla, and salt with a wire whisk or an electric mixer on low speed till light and frothy. Stir in the yogurt till mixture is smooth. Add flour; beat till combined and mixture is smooth.
2. Grease a 10-inch quiche dish; arrange desired berries in bottom of dish. Pour batter over fruit. Bake in a 375° oven for 30 to 35 minutes or till center appears set when shaken. Cool on a wire rack for 30 minutes. Serve warm. Just before serving, sprinkle with powdered sugar and, if desired, garnish with additional raspberries and edible flowers.
