Ingredients
2 pounds beef stew meat, cut in 1 1/2 or 2-inch cubes
1/2 cup all-purpose flour
3 tablespoons chopped suet or other fat
1 medium-sized onion, sliced
1 clove garlic
2 bay leaves
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon pepper
1/2 teaspoon paprika
Dash of cloves or allspice
1 teaspoon lemon juice
1 teaspoon Worcestershire or bottled brown gravy sauce
4 cups boiling water
5 or 6 carrots, sliced
6 or 8 whole, small boiling onions
4 or 5 stalks celery, sliced
Directions
Put meat and flour in a paper bag; shake until all pieces of meat are coated with flour.
Melt suet or other fat in a heavy frying pan or Dutch oven; add meat and any extra flour remaining in bag; saute until meat is nicely browned, turning to brown all sides.
Add onion, garlic, seasonings, and boiling water; cover tightly and cook over low heat for 1 1/2 to 2 hours, or until meat is tender.
Add vegetables; continue cooking 15 to 30 minutes longer, or until vegetables are tender.
