Ingredients

 
1 heart of romaine lettuce
 
3 medium-sized tomatoes, cubed
 
2 cucumbers, peeled and diced
 
1 green bell pepper
 
1 medium-sized onion, chopped
 
4 tablespoons finely chopped fresh parsley
 
1 tablespoon fresh mint, finely chopped; or 2 teaspoons dried mint
 
1 clove of garlic, mashed with a pinch of salt
 
1/2 cup olive oil
 
1/4 cup lemon juice
 
Salt and pepper, to taste
 
1 piece pita bread, toasted and cut into small pieces

Directions

Combine and toss gently in a wooden salad bowl the lettuce, the vegetables, the parsley, and the mint.
Mix the mashed garlic, olive oil, lemon juice, and salt and pepper; add to salad and toss well.
Chill for approximately 1 hour before serving.
