Farmhouse White Loaf Recipe
Ingredients
1/2 cup golden or light corn syrup
1/4 cup butter or margarine
2 1/2 cups sifted self-rising flour or 2 1/2 cups all-purpose flour sifted with 2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon baking powder
2 large eggs
2/3 cup milk
1 1/3 cups mixed dried fruit
Grated rind of 1 lemon
Directions
Grease and line a large 9 x 5 x 3-inch loaf pan.
Measure the syrup and butter or margarine into a saucepan and heat slowly together until melted.
Sift the flour, salt and baking powder into a bowl.
Beat the eggs with the milk and pour into the dry ingredients with the melted mixture.
Mix thoroughly then fold in the fruit and lemon rind.
Quickly spoon the mixture into the prepared pan.
Bake toward the bottom of a moderate oven (325°F) for about 1 1/4 hours.
Turn out onto a cake rack and leave to cool.
