Farmhouse Chicken Pie Recipe

Ingredients

 
1 semi cooked chicken
 
1/2 lb ham
 
3 hard boiled eggs
 
Chopped onion, thyme or chervil to flavour
 
3/4-1 lb short or flaky pastry

Directions

Simmer chicken in a stew pot with onion, carrot and a bay leaf.
When it is half cooked, after about 40 minutes, lift from the stew pot, and slice off the meat.
Put a layer at the bottom of the pie dish, then a layer of ham.
Sprinkle lightly with the mixture of finely chopped onion and thyme or chervil between the layers.
The hard boiled eggs should be sliced and form the middle layer.
Moisten with some of the stock in which the bird was cooked and put on the lid of pastry.
Remember to make a small hole in the top so that the steam can escape.
Glaze with beaten egg, and cook in a moderate oven for 1 hour.
