Ingredients

 Cabbage- 1 medium-sized head, finely shredded
 Salt1 Tablespoon
 Water2/3 Cup (16 tbs)
 Celery- 4 heads, diced
 Pepper red1 , diced
 Watercress1 Bunch (100gm), chopped
 Water6 Tablespoon
 Malt vinegar2/3 Cup (16 tbs)
 Artificial sweetener2 Teaspoon
 Celery seeds1 Teaspoon

Directions

GETTING READY
1) In a bowl, arrange in layers cabbage, salt and 2/3 water.
2) Leave the cabbage to rest for 2 hours.
3) Using a perforated ladle, scoop out the cabbage and squeeze out the liquid.

MAKING
4) In a bowl, place the cabbage, celery, pepper and watercress.
5) Fold the cabbage mixture lightly.
6) In a bowl, mix together water, vinegar, sweetener and celery seeds.
7) Pour the vinegar mixture over cabbage mixture and toss lightly.

SERVING
8) Serve cold on a flat plate with chicken or beef steak.
