 Green beans1/2 Pound, cut in half
 1 carrot, pared and sliced
 1/2 cup fresh green peas
 1 small yellow summer squash, split in two lengthwise and diced medium
 1 yellow pepper, diced medium
 Butter1 Tablespoon
 Garlic1 Clove (5gm), smashed
 Tarragon1 Teaspoon
 Few drops of lemon juice
 Salt To Taste
 Pepper To Taste

Directions

Bring 1 cup (250 mL) water to boil in saucepan over medium heat. Add beans and carrot; season with salt and cook 10 minutes.
Remove pan from heat and place under cold running water for 3 minutes. Drain vegetables and set aside.
Bring 1/2 cup (125 mL) salted water to boil in saucepan over medium heat. Add peas and cook 4 minutes.
Add yellow summer squash and pepper; continue cooking. As soon as vegetables are cooked, place saucepan under cold running water for 3 minutes. Drain well.
Heat butter in saucepan over medium heat. Add garlic, tarragon and all vegetables. Mix and season with salt, pepper and lemon juice. Simmer 4 minutes, then serve.
