Ingredients

 
2 pounds ground lean pork
 
1 pound ground salt pork
 
1 large onion, finely minced
 
1 clove garlic, ground
 
1 tablespoon salt
 
1 tablespoon rubbed sage
 
1 teaspoon each of ground cloves and mace
 
2 teaspoons coarsely ground black pepper
 
1 tablespoon minced parsley
 
1 bay leaf, crushed
 
1/4 teaspoon ground allspice

Directions

Combine all ingredients and mix thoroughly.
Use to stuff sausage casings or form into patties.
In either case, pan-fry or bake on a rack until crisp but not dry.
