Farm Style Bean Soup Recipe
Ingredients
| 1 1/2 cups dry white or navy beans | ||
| Water | 6 Cup (16 tbs) | |
| Salt pork | 1/4 Pound, diced | |
| 2 or 3 large onions, sliced | ||
| Bay Leaf | 1 | |
| Salt | 2 Teaspoon | |
| Beef | 1/2 Teaspoon | |
| 1 (2- or 3-lb) lean beef brisket or shank | ||
Directions
Wash beans, soak overnight in the water.
Fry the diced salt pork slowly until lightly browned, using a large heavy pan.
Add onions and cook until soft.
Pour in beans and water, then add remaining ingredients.
Cover closely and simmer for 2 1/2 to 3 hours, or until both meat and beans are tender, adding more hot water if necessary.
Taste for seasoning.
Before serving time, lift meat out of the soup and slice.
