Ingredients
2 cups milk
1 tablespoon butter or margarine
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/8 teaspoon pepper
1/4 cup quick enriched farina
3 eggs
1/4 pound Monterey Jack cheese, shredded
Directions
1. Preheat oven to 350°F. Grease six 6-ounce custard cups; set aside.
2. In 2-quart saucepan over medium-high heat, heat milk, butter or margarine, salt, dry mustard, and pepper to boiling. Gradually stir in farina; heat to boiling. Reduce heat to medium-low and continue cooking, stirring constantly, until mixture thickens, about 2 to 3 minutes.
3. In medium-sized bowl, with fork or wire whisk, beat eggs until blended. Beating eggs rapidly, gradually beat in hot farina mixture; then stir in shredded cheese.
4. Pour farina mixture into greased custard cups; place cups in 13" by 9" baking pan. Fill pan with boiling water to come halfway up side of cups. Bake custard 25 minutes or until knife inserted in center comes out clean.
