Fantastic Pork Liver Sauteed In Raisins Recipe
Ingredients
75 mL 1/3 cup Sultana raisins
250 mL 1 cup beef broth, skimmed
500 g 1 lb pork liver, sliced
125 mL 1/2 cup all-purpose flour
15 mL 1 tbsp margarine
25 mL 2 tbsp red wine vinegar
50 mL 1/4 cup mayonnaise salad dressing
50 mL 1/4 cup plain low-fat yogurt
Directions
Soak the raisins in the beef broth for about 2 hours, then drain (set aside the broth).
Dry the pork livers using a paper towel; cover with flour.
Cook the slices of pork in a frying pan for about 4 minutes, then place on a plate; set aside but keep warm.
Deglaze the pan using the red wine vinegar, then dilute with the beef broth.
Bring to a boil, then reduce for 5 minutes.
Mix the sauce with the mayonnaise and the yogurt (do not bring to a boil).
Add the raisins.
Arrange the pork liver slices on a plate and coat with the sauce.
