Fancy Filled Cookies Recipe
Fancy Filled Cookies...as the name suggests, these are fancy to look at and delicious to taste!! Filled with a delectable plum and apricot preserves, these satisfy those midday sweet cravings too! The recipe is a little elaborate, but the end result is definitely worth it!
Ingredients
Butter or margarine - 1 cup, soft
Sifted confectioners' 10X sugar - 1 cup
Egg - 1
Vanilla - 1 teaspoon
Cinnamon - 1/2 teaspoon
Sifted enriched flour - 2 1/2 cups
Baking powder - 1/2 teaspoon
Quick rolled oats - 1 cup, uncooked
Plum preserve-2 tablespoons
Apricot preserve - 2 tablespoons
Directions
MAKING
1) In a mixing bowl, combine and beat the butter, sugar, egg, vanilla and cinnamon.
2) Sift together the flour and baking powder.
3) Add into the butter mix and beat well.
4) Blend in the oats.
5) Refrigerate the mix.
6) Lightly flour a board.
7) Roll out the dough to a 1/8-inch thickness.
8) Using a well-floured round cutter, cut out 48 cookies.
9) Divide into two batches of 24 cookies each.
10) Arrange one batch of 24 cut-outs on an ungreased cookie sheet.
11) Over each of these, place about 1/2 teaspoon preserve in the center.
12) From the other batch of 24, cut out a 3/4-inch in diameter circle from the center of each.
13) Place these doughnut shaped cookies over the preserve-topped cookies.
14) Carefully seal down the edges.
15) Place in the moderate oven at 375° F and bake for 12 to 15 minutes, till lightly browned around the edges.
16) Immediately remove from the cookie sheets.
17) Cool.
