Combine eggs, 4 egg yolks, sugar, and salt in a large bowl, mix well.
Add 1 1/2 cups bread flour, beat until smooth.
Add butter, beating until smooth.
Add remaining bread and all-purpose flours to make a stiff dough, beat well.
Turn dough out onto a floured surface, and knead until smooth and elastic (3 minutes).
Place in a well-greased bowl, turning to grease top.
Cover and let rise in a warm place (85Â°), free from drafts, 1 hour or until doubled in bulk.
Punch dough down.
Divide dough into 4 portions, cover 1 portion, and set aside.
Cut each of the 3 portions in half.
Shape each half into 4 balls, yielding a total of 24 balls.
Place in greased muffin pans.
Cut reserved dough into 4 portions, divide each into 6 pieces.
Shape into 24 small balls.
Make an indentation in each large ball.
Brush holes with water, press small balls into indentations.
Cover and let rise in a warm place, free from drafts, 1 hour or until doubled in bulk.
Combine remaining egg yolk and 1 teaspoon water, brush tops of rolls.
Bake at 375Â° for 10 to 12 minutes or until golden.
