Fancy Cherry Pie Recipe
Fancy cherry pie is a beautiful cherry pie made with a cooked cherry filling in a baked pastry shell. The cherry pie filling is made with cooked cherries along with cornstarch and sugar. Topped with baked cutouts, the fancy cherry pie is good to look at and even better to savor.
Ingredients
1 No. 2 can (2 1/2 cups) frozen tart red pitted cherries
1/3 cup sugar
1 1/2 tablespoons cornstarch
Baked 8-inch Pastry Shell and Cutouts
Directions
Drain cherries; reserve syrup.
Add water to syrup, if needed, to measure 1 cup.
Combine 3/4 cup of the syrup and sugar; heat to boiling.
Add cherries; cook 2 minutes.
Mix cornstarch with remaining 1/4 cup cold syrup; stir into hot mixture.
Cook and stir till thick and clear.
Cool till just warm.
Pour into baked Pastry Shell.
Let stand several hours.
Top with baked Cutouts.
