Fancy Peach Mousse Recipe
Ingredients
3/4 cup orange juice
2 envelopes unflavored gelatin
4 eggs, separated
1 1/2 cups milk
1/2 cup honey
1 tablespoon light molasses
1 teaspoon rum extract (optional)
1/8 teaspoon cream of tartar
2 tablespoons honey
1 cup heavy cream
20 Ladyfingers
4 cups finely chopped peeled peaches
Directions
Pour orange juice into a small bowl, and sprinkle gelatin on top.
Set aside for 5 minutes to soften.
In a medium-size saucepan, beat egg yolks.
Add milk, 1/2 cup honey, and molasses.
Cook over low heat, stirring constantly, until mixture begins to thicken and coats the back of the spoon.
Mix in gelatin, and stir to dissolve.
Add rum extract, if desired.
Pour into a large bowl, and chill until thickened but not set, stirring often.
In a medium-size bowl, beat together egg whites and cream of tartar until foamy.
Add 2 tablespoons honey, and continue to beat until stiff peaks form.
In another medium-size bowl, beat cream until soft peaks form.
Line a 9-inch springform pan with Ladyfingers.
Fold egg whites, whipped cream, and peaches into gelatin mixture in that order.
Turn into prepared pan, and chill until set, about 4 hours.
Remove sides of pan, invert, and remove bottom.
