Fancy Holiday Stuffing Recipe

Ingredients
2 packages (12 ounces each) All-Natural Roll Sausage
3/4 cup (1 1/2 sticks) unsalted butter
3 medium onions, coarsely chopped
2 cups chopped celery, including tops
3/4 (1-pound) loaf day-old white bread with crusts, torn into small pieces
2 eggs, lightly beaten
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1 (8-ounce) can whole water chestnuts, drained and coarsely chopped or 1 apple, chopped
1/2 cup chopped fresh parsley
1 tablespoon plus 1 1/2 teaspoons poultry seasoning
2 teaspoons salt or to taste
1 1/2 teaspoons freshly ground pepper
Directions
Crumble sausage into large skillet.
Cook and stir sausage over medium-high heat until cooked through (no longer pink but not dry), about 5 to 8 minutes.
Transfer sausage and drippings, if desired (there will be less than 2 tablespoons) to large mixing bowl.
Melt butter in same skillet over medium heat.
Saute onions in butter until tender.
Add celery and continue cooking 2 to 3 minutes.
Add onion mixture to sausage.
Add remaining ingredients, mixing thoroughly but gently.
Use to stuff turkey loosely just before roasting.
Place any remaining stuffing in greased baking dish.
Bake in 325°F oven 30 minutes or until thoroughly heated.
