Fancy Corn Muffins Recipe

Ingredients
1 cup yellow cornmeal
2 medium eggs, beaten
1 cup all purpose flour
1 cup milk
1/4 cup sugar
1/4 cup vegetable oil
4 teaspoons baking powder
1 can Mexicorn, drained
1/4 teaspoon chili powder
1/2 teaspoon salt
Directions
Mix and sift cornmeal, flour, sugar, baking powder, chili powder, and salt.
Stir in eggs, milk, and oil.
Beat with rotary beater until smooth, about 1 minute.
Mix in corn.
Bake muffins in glass custard cups lined with baking papers.
Fill papers 1/2 full.
Bake 6 at a time, in a circle arrangement, in Radarange oven 2 1/2 to 23/4 minutes.
Remove muffins to a cooling rack.
Repeat with remaining dough until all are baked.
Stir in eggs, milk, and oil.
