2 cups sugar
2/3 cup half and half
1/4 cup light corn syrup
1 (1 ounce) square unsweetened chocolate
1/4 cup butter or margarine
2 teaspoons vanilla extract
Directions
Combine sugar, half and half, corn syrup, and unsweetened chocolate square in a dutch oven; cook over low heat, stirring gently, until sugar dissolves.
Cover chocolate mixture and cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan.
Uncover and cook to soft ball stage (238°), stirring occasionally.
Remove chocolate mixture from heat.
Add butter and vanilla.
Cool to lukewarm (110°); beat with a wooden spoon until mixture thickens and begins to lose its gloss.
Pour mixture into a buttered 8 inch square pan, spreading with a spatula.
Cool and cut into squares.
Cover chocolate mixture and cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan.
