Ingredients

 Cooked chickpeas2 Pound, drained, rinsed
 Water1/3 Cup (16 tbs)
 1 slice firm whole wheat bread, crusts removed
 1 tablespoon unbleached white flour
 Baking soda1/2 Teaspoon
 Garlic3 Clove (5gm), finely chopped
 1 egg, lightly beaten
 Parsley2 Tablespoon, chopped
 Salt3/4 Teaspoon
 Ground black pepper1/4 Teaspoon
 Ground cumin1/4 Teaspoon
 1/2 teaspoon pound turmeric
 Dried basil1/4 Teaspoon
 Dried marjoram1/4 Teaspoon
 Sesame paste1 Tablespoon
 Cayenne pepper1 To taste
 Vegetable oil2 Cup (16 tbs) (For frying)
 Flour for coating
 Whole wheat pita5 , halved
 Onion1/2 Cup (16 tbs), chopped
 1 tomato, peeled and diced
 Lettuce1 Cup (16 tbs), shredded

Directions

1. Grind the chick-peas through the coarse blade of a meat grinder or in the container of a food processor.
2. Add the remaining ingredients, with the exception of the last 6 ingredients. Mix well. The mixture will be soft.
3. Preheat the oil to 365 degrees.
4. Form the mixture into 1-inch balls, coat with the flour and fry, in a basket, four or five at a time, in the hot oil. The balls rise to the surface and are light brown when cooked. This takes about 2 minutes. Drain on paper towels.
