Fair Island Eggs Recipe

Ingredients
4 onions, sliced
2 tsp low-calorie margarine
1 cup skim milk
1 tsp all-purpose flour
8 eggs, hard-cooked and sliced
1/2 cup dry bread crumbs
Directions
Brown onions in margarine and place in a layer on the bottom of a 9 in. (23 cm) square baking dish.
Combine milk and flour in top of a double boiler; cook and stir until partially thickened.
Season with salt and pepper to taste.
Pour sauce over onions.
Place sliced eggs on top of sauce.
Sprinkle bread crumbs around the egg slices.
Bake at 400°F (200°C) until crumbs are browned.
