Fabulous Fish Terrine Recipe
Fabulous fish terrine is a baked whitefish preparation. The fish is cooked in wine and mixed with the vegetables. Combined with eggs and breadcrumbs, the fish is flavored with a hint of tabasco sauce and garlic. Baked in the oven, the fish terrine comes out nice and set. served with lemon slices and parsley, it can be paired with sides of choice.
Ingredients
1/2 cup dry white wine or fish broth
1/4 teaspoon salt
2 pounds white fish fillets
2 tablespoons butter or margarine
1/3 cup chopped onion
1 clove garlic, minced
1 small red pepper, slivered
1/2 cup chopped celery
3 eggs, lightly beaten
2/3 cup dry bread crumbs
1/2 to 3/4 teaspoon TABASCO pepper sauce
Lemon slices, parsley and red pepper rings for garnish
Directions
Preheat oven to 350°F.
In medium skillet combine wine and salt; bring to a boil.
Add fish; cover and cook over low heat 5 minutes or until fish flakes easily when tested with fork.
Remove fish and liquid to large bowl; cool.
In same skillet melt butter; cook onion and garlic 5 minutes or until tender.
Add red pepper slivers and celery; cook 5 minutes longer.
Add cooked vegetables to fish and mix well, breaking up fish into large pieces.
Add eggs, bread crumbs and Tabasco® sauce; mix well.
Press mixture into greased 9x5x3-inch loaf pan.
Bake 45 minutes or until center is firm.
Cool 10 minutes.
Loosen edges of loaf with spatula; turn onto serving platter.
Garnish with lemon slices, parsley and red pepper rings.
