Ingredients

 Potatoes3 inch, peeled
 Salt To Taste
 Flour
 Oil for deep frying
 Green peas3/4 Cup (16 tbs)
 Oil1 Tablespoon
 1/2 tsp cummin seeds
 Onion1 , chopped
 Green chillies2 , chopped
 6 chopped cloves of garlic
 Juice of 1 lime
 Tomato sauce2 Tablespoon
 Garam masala powder1 Teaspoon

Directions

Scoop out the centre and make a hollow in each potato with a potato peeler.
Be careful not to pierce the outside of the potato.
Apply a little salt and dust it with flour.
Deep fry in oil until golden brown on the stove.
Put the potatoes in a colander to drain off the extra oil and let them cool.
Chop the scooped out bits of the potatoes and boil in very little water in the microwave for 5 minutes.
Microwave oil, cummin seeds, onion, green chillies and garlic in a dish for 3 minutes until onions turn golden.
Mix in the lime juice, salt, boiled potatoes and green peas.
Mash a little and stuff the cavity of the potatoes with this mixture.
Mix a little water with tomato sauce and place the potatoes (cavity up) in this and microwave for 5 minutes, turning the potatoes over.
Let it stand for 3 minutes

This sounds really great...except for all the microwaving...doesn't sound so exotic in this case
