Exotic Fruity Parcels Recipe
Ingredients
| 1 pawpaw (papaya) | ||
| Mango | 1 | |
| Star fruit | 1 | |
| Grenadine | 1 Tablespoon | |
| Orange juice | 3 Tablespoon | |
| Single (light) cream or natural yogurt, to serve | ||
Directions
GETTING READY
1)Halve the papaya or pawpaw and deseed it. Peel it and cut into thick pieces.
2)Cut mangoes lengthwise on both sides of the stone. On the 2 mango halves, using a knife make shallow cuts in a criss cross pattern. Now turn mango inside out to push the cut squares outside. Cut the cubes so formed and separate from peel of mango.
3)Use a paring knife and slice star fruit.
MAKING
4)In a bowl put in papaya pieces, mango cubes and sliced star fruit. Mix well.
5)In a bowl, mix grenadine and orange juice. Pour this mixture over the fruits in bowl.
6)Let soak to bring out flavors for 30 minutes.
7)Take 4 squares of kitchen foil of double thickness and bring the edges together to from parcels or pouches to carry the fruits.
8)Transfer fruits into these parcels and place them on wire rack.
9)Grill over warm coals for 15 to 20 minutes.
SERVING
10)Serve with yogurt or light cream.
